The beating heart of our winemaking is located in Cispiano and is divided into two main areas:
The Tinaia where the first steps of winemaking are carried out, from the reception and first processing of the grapes to the last stages before bottling. Our pool of tanks is made of concrete, the preferred one for alcoholic fermentations, due to its ability to keep temperatures more constant, and of steel, the best for cleaning and hygiene management.
The Barriccaia located in the basement of Cispiano, where humidity and temperature naturally remain constant, creating the perfect environment for our barrels. Here we find our barriques, tonneaux and barrels, very important tools for the growth of our wines.
The new entry this year is our new part of the cellar located in Certaldo, a few kilometers from Gambassi Terme, obtained from the renovation of a building that is part of a renowned carpentry. Here our bottled wines, our extra virgin olive oil and some steel tanks are kept for the wines that are about to be bottled
